Plant Development and Care
Spinach plants will germinate in cool soils (32° F to 40° F) and grow quickly in these conditions.
Spinach should not be subjected to wet, dry, wet, dry soil cycles. Keep the soil moist, but not soggy.
Spinach is ready to pick when the greens are young, tender, and mildly flavored. Begin cutting the greens when they are about 2" tall. Cut the entire clump at the soil level when it has reached full size.
