Lima beans
This past week we have seen an increased interest in harvesting lima beans. Give the people what they want! Let’s talk lima beans.
Lima beans should be picked when the pods are well-filled but before they turn yellow. When harvesting lima beans, look for a pod that feels somewhat spongy on the end and break off the pod near the stem. Once you’ve picked your beans, store them in a cold and humid environment.
Put your beans to use as soon as possible after picking. Lima beans should be shelled by pressing on the edges of the pod to pop it open. Once you’ve extracted the bean you should eat them soon or store them by freezing, bottling or drying preservation methods.
